BOLO

Ingredientes:

1 abacaxi
1/2 xícara de açúcar
3/4 de xícara de água

Misture o açúcar e a água numa panela e junte o abacaxi cortado em fatias. Ferva por uns 5 minutos, retire do fogo e deixe esfriar. A calda deverá ser usada para molhar o bolo e também para a massa. Caso não seja suficiente para a quantidade pedida na massa, complete com água ou leite.



Massa:

6 ovos
2 e 1/2 xícaras de açúcar
3 xícaras de farinha de trigo
1 colher de sopa de fermento em pó
1 e 1/2 xícaras da calda do abacaxi (
100g de manteiga ou margarina

Pré-aqueça o forno. Esquente a calda com a manteiga até derreter. Bata as claras em neve, junte as gemas, uma a uma, batendo bem. Junte o açúcar e bata até ficar fofo e claro. Peneire a farinha e fermento por cima dos ovos e misture um pouco e junte a calda com manteiga reservada (quente). Misture tudo sem bater e despeje em dois tabuleiros médios (ou 1 grande), untado e enfarinhado ou forrado com papel manteiga culinário. Asse em forno moderado por aproximadamente 40 minutos até que espetando um palito este saia limpo. Deixe esfriar em uma grade.



Recheio:

1 lata de leite condensado
1 lata de leite
3 colheres de sopa de amido de milho
metade do abacaxi em calda picado miúdo

Leve tudo ao fogo (menos o abacaxi), mexendo sempre até ferver e engrossar. Retire do fogo e junte o abacaxi. Deixe esfriar. 

Cobertura:

500 ml de creme de leite fresco bem gelado
4 colheres de sopa de açúcar
2 colheres de chá de essência de baunilha.

Bata o creme de leite com o açúcar até ponto de chantilly, junte a baunilha e misture.



Montagem:

Corte o bolo ao meio, molhe com o restante da calda de abacaxi, Recheie com o creme de abacaxi e sobreponha a outra metade do bolo. Molhe novamente e cubra com chantilly. Decore com o restante do abacaxi, à gosto. Deixe na geladeira até a hora de servir.

Obs:
Como optei por fazer dois bolos, fiquei com 3 camadas de recheio. Na camada do meio, coloquei uma fina camada do recheio de abacaxi e uma camada de creme chantilly.

DECORAÇÃO DE CHOCOLATE:

Corte uma tira de papel manteiga culinário um pouco maior do que a volta do bolo. 
Derreta 70 g de chocolate meio amargo no microondas ou em banho maria. Junte mais 30 g de chocolate ralado e misture para resfriar (temperagem). Coloque em um saco de confeitar com bico liso bem fininho e faça desenhos aleatórios (ou não... aí vai a criatividade de cada um...). Deixe a folha em cima de uma superfície de mármore para firmar. Quando estiver firme porém ainda maleável, enrole nas laterais do bolo previamente coberto com uma fina camada de chantilly, pressionando delicadamente. Retire o papel com cuidado e pronto! Você vai se surpreender com a sua própria criação!!
